Gluten Free Super Moist Banana Bread With Cranberries

INGREDIENTS

  • 2 bananas

  • 2 eggs

  • 1/3 cup coconut oil

  • 1 cup almond milk

  • 1 teaspoon vanilla

  • 2 cups gluten free flour blend

  • 1/2 cup almond flour

  • 1/4 cup flaxseed meal

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1/3 cup walnuts

  • 1 cup fresh cranberries

  • 1 cup sugar, coconut or brown sugar is fine too

INSTRUCTIONS

  1. Preheat the oven to 350F degrees.

  2. In a large bowl, add the dry ingredients and whisk to blend.

  3. In a medium-sized bowl, add the wet ingredients and mix.

  4. Pour the wet ingredients into the dry ingredients. Add the fresh cranberries and walnuts.

  5. Mix together and pour the batter into a greased bread loaf tin.

  6. Bake for 30 minutes until done.
