1/3 cup coconut oil
1 cup almond milk
1 teaspoon vanilla
2 cups gluten free flour blend
1/2 cup almond flour
1/4 cup flaxseed meal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/3 cup walnuts
1 cup fresh cranberries
1 cup sugar, coconut or brown sugar is fine too
Preheat the oven to 350F degrees.
In a large bowl, add the dry ingredients and whisk to blend.
In a medium-sized bowl, add the wet ingredients and mix.
Pour the wet ingredients into the dry ingredients. Add the fresh cranberries and walnuts.
Mix together and pour the batter into a greased bread loaf tin.
Bake for 30 minutes until done.
